Seared Chicken with Avocado



  • 4 (6 ounce) skinless, boneless chicken breast halves

  • 1 dice peeled avocado

  • 1 teaspoon olive oil

  • 1 ½ teaspoons blackened seasoning

  • 1 jalapeno pepper, seeded and finely chopped

  • 2 tablespoons chopped fresh cilantro

  • 2 tablespoons fresh lime juice (about 1 lime)

  • 1lime, cut into fourths




  1. On both side of the chicken sprinkle seasoning. Heat up a large nonstick skillet over a high heat then put the oil. Add chicken; seared or cook for 1 minute. Reduce heat to medium; cook until done for about 3 minutes on each side.

  2. Combine avocado and the rest of the ingredients in a bowl and mix. Squeeze lime over chicken before serving and top with avocado mixture.
